good wine


Boughtthis wine the other week it's very good.

Tiramisu










Tiramisu for 6 people

2 dl Whipped cream

4 Egg yolks

0.75 dl Sugar

500 g Mascarpone

200g Ladyfingers/ Savoyard kex

5 tblsp Espresso/ strong coffee

2 tblsp Kahlua

2 tblsp coco powder/ shredded dark chocolate

· Whip the cream with 1 tblsp of sugar until it becomes a firm foam

· Whip the egg yolks w the rest of the sugar until its fluffy

· Add the whipped cream and mascarpone to the egg yolks a little at the time

· Mix the coffee with the Kahlua quickly dip the lady fingers in the coffee don’t’ let them get to soaked.

· Shred of sprinkle 1 tblsp of coco or chocolate over the lady fingers then cover them with the mascarpone mixture.

· Let the tiramisu rest for an hour in the refrigerator for 1 hour before serving it. Just before you serve it sprinkle or shred 1 tblsp of coco or chocolate over.

· This is a very good dessert to prepare the day before, it taste even better the day after =)

Lussekatter





Lusse Katter

· 3 packages of dry yeast or 50g of fresh yeast

· 100 g/ 7 tbls salted butter

· 5 dl/ 2.10 cups whole milk

· 250 g/ 1 cup quark (can be found at Gelson’s and some whole foods stores do not buy fat free)

· 1 to 2 g saffron

· 1 ½ dl/ 0.63 cups sugar

· ½ tsp salt

· 17 dl/ 7 cups all purpose flower

· Raisins

· 2 eggs

- Melt the butter and ad the milk heat it up to 98 F (finger warm)

- Put the yeast in a bowl and add the butter/milk fluid. Whip it so that the yeast desolve.

- Grind or chop the saffron and add it to the milk

- Add quark, sugar, salt and most of the flower

- Work the dough until it gets smooth, shiny and the dough comes of the bowl walls.

- If needed add some extra flower.

- Let the dough rise for 30 min

- The take small pieces at the time and roll them out to rolls and trvirl them in to an S

- Let them rise for 20-30 min put two raisin on each S and pensel them with whiped egg.

- Let them bake in the middle at 450 F for 5-7 min

My Great Grandmothers Elsa Cinnamon Cookies


This is a Swedish recipe and I will convert the measurements to cups and tbls. However you will find that many cup measurements have dl or ml on them 1dl is 100 ml. If you are at IKEA you can find the dl measurements there.

Tant Elsas Kanelskorpor/ Aunt Elsas Cinnamon cookies

2 ägg/eggs
2 dl socker/ 0.85 cup sugar
80 gr smör/ 5.60 tbls butter
6 dl vetemjöl/ 2.54 cup flower
2 tsk bakpulver/ tsp baking powder.

Swedish ;
Vispa ägg o socker. Smält smöret, röres i sist. Mjöl o bakpulver blandas. Dela degen i 3 delar och rulla 3 längder. Lägg på smord plåt. Tryck ut en fåra i mitten och strö i socker o kanel.
Gräddas i 225 grader tills de fått lite färg. När längderna svalnat skär ut kakor på snedden.

English:
Whip the eggs and sugar fluffy. Melt the butter and stir it in with the egg mixture. Mix the flower and baking powder then add it to the rest of the mixture. Divide the mixture in to 3 parts roll them out to 3 rolls. Put them on a baking sheet drag a small spoon in the middle of each one. Sprinkle Cinnamon and sugar in the line made in the middle of each roll. Bake them in the middle 437 F until they get some color. When they have been removed from the oven, let them cool down slight and the cut out the cookies diagonally.

sunny but chilly day

It's saturday and usally in Laguna we have a farmers market every Staturday. I was really happy when i woke up this morning and i was looking forward to one of my favorite breads that I buy at the german backery tent. When I started walking to the market i looked accross the street and it wasnt there :-( . So I went to Whole foods to get some frechly baked bread, I piked up some avocado, cucumber, sprouts, whipped cream cheese and whole wheet bread.
I made some good toast with cream cheese, avocado, cucumber, sea salt and pepper oh and one toast I put some good salami on.
It was fresh.

Cooking dinner with my friend 2 night

I'm going to cook dinner with good friend Melissa and this what I think we will cook herb infused chicken breast with wild rice, julienne zucchini, broccoli and goat cheese sauce on the side. And for dessert Banana tarts with vanilla ice cream.

What I need to get to make it happen;

2 chicken breast

2tbs chopped fresh, parsley, sage, oregano, thyme and rosemary

2tsp sweet paprika

S&P

½ cup/ 1dl wild rise

¼ of a chicken cub

Sauce;

½ dl / ¼ cup crème fraiche or sour cream

2tbs goat cheese

Veggies;

½ small zucchini juliennes

Broccoli

Dessert;

2 Bananas

½ tbs Brown sugar and 2tsp cinnamon

Rolled up pastry crust ready to bake

1 egg

How we will cook it;

Put the oven on 345F/ 175C

Boil the water for the rice and include the chicken cub, then add the rice and some salt.

Clean the chicken breast and rub herds and paprika on them take out casserole/ ugn fast from drizzle some olive oil in the bottom and put them in the oven. Chopped the zucchini in to julienne (thin sticks), boil some water add the broccoli and after 2min add the zucchini. If you want you can add some julienne carrots too. Turn the heat on low and heat up the cream fraiche add the goat cheese.

Dessert;

Put the oven on at the degree recommended on the box

Mix the sugar and cinnamon, if you want do as my friend Trish said add some rum.

Roll out the crust and make it a little bit thinner cut out an5 inch square. Now chop up the bananas in 1 inch pieces mixed them with the sugar mixture and place them in the middle of the pastry brush the edges with the whisked egg and fold the edges to on side so that is make’s a triangle. The brush some egg on the top put it on a bake pan and then in the oven. Serve this with vanilla ice cream or equal amounts whipped mascarpone and whipped cream add a little vanilla to the mixture.

I might do some small changes to the final result depending on what I find in Melisa’s cupboards and what she might want to add.

It is always fun to cook with your friends I used to do it quit often when I lived in Sweden. If you are English and read this you might notice that some words are different in the text. I have added some Swedish words and measurement as I know that some of my friends and family might not know what I’m talking about. Plus the measurements are sometimes different in Sweden.

Just started my first blog!

I been wanting to start a blog for a long time. I want to be able to share good recipes and so much more.

Just before Christmas a saw this great recipe on Macaroni and Cheese;
1 cup or 2dl Barilla plus macaroni's
2 table spoons Mascarpone cheese
2 table spoons grated Parmesan cheese
2 table spoons grated cheddar
2 table spoons grated
1 table spoon of butter
4 leafs of sage (salvia)
1 table spoon of fresh parsley
Bread crumbs
S & P
  • boil water and add the macaroni's
  • melt the butter so that it get a golden color add the chopped parsley and sage and put it to the side
  • put the oven on broil/grill
  • mix all the cheeses, mixed the cook macaroni's with the melted butter and the cheese.
  • Put everything in an casserole /ungfast form sprinkle some bread crumbs over the top and put in the oven for 5 min.
This dish is very good with a piece of steak, chicken or fish and a good salad.
